Order a nicoise salad at any restaurant and you may be surprised when it arrives at your table. Almost every restaurant places their own spin on this wonderfully light and crisp salad. Some chefs only use raw vegetables, while others might consider the addition of potatoes a big faux pas. Regardless of how it arrives, I am always pleased with this satisfying and fresh spring salad. Requiring some preparation and patience, it is well worth the effort as you will not only feel satiated, but healthy and rejuvenated as well. This vinaigrette from the New York Times, is delightful and a cinch to make. Spring is in the air, Bon Appetit.
