Pumpkin Pecan Crumble Muffins

If you are a pumpkinphile like myself, a trip to your local Trader Joe’s this time of year, is as excitable as Celine Dion’s (NSFW) persona. Aisles are lined with all things pumpkin:  beer, cereal, oatmeal, trail mix, chips, pastries, bread and frozen pumpkin waffles.  Yes, I am a pumpkin lover and T.J.’s in Autumn is my temple of edible inspiration.

Pumpkin pie has been a loyal Thanksgiving dessert and I have no intention of discontinuing our relationship anytime soon.  However, I may be ready to date around a bit, see what else is out there.  It’s just temporary Mr. pie, put down your whip cream,  couples’ counseling isn’t on the horizon yet.

By the time December rolls around, pumpkin pie is about as appealing as shopping on Black Friday.  These muffins however, offer a lovely alternative to the redundancy of pie.  They have an exquisite subtle pumpkin flavor, a “sticky-date-cake” consistency, ooey-gooey chocolate chips and a crisp nut topping.   Even more appealing: they are easy to transport, they’re already individually “packaged” and they are slightly more gentle on your waistline.

So, if you find yourself with a roaming eye this season and are ready to play the field, these flirty little desserts are the perfect companion, sure to leave you feeling satisfied, full and free of regrets.

Pecan Pumpkin Crumble Muffin

Ingredients
  • 7½ oz All-Purpose Flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp pumpkin spice
  • 1 can (15oz) of pumpkin puree
  • 1 cup of granulated sugar
  • ⅓ cup canola oil
  • 1 large egg
  • ¼ oz applesauce
  • ¼ tsp almond extract
  • 1 tsp vanilla
  • ¾ cup of semi-sweet chocolate chips
  • Topping
  • 1½ cup chopped walnuts
  • 3½ Tbsp of very cold butter - small diced
  • 3 Tbsp sugar
  • 1 tsp cinnamon
Instructions
  1. Heat oven to 350 F. Spray muffin tin lightly with non-stick spray.
  2. In a medium bowl, whisk: flour, baking powder, baking soda, salt and pumpkin spices.
  3. In a large bowl, whisk: pumpkin puree, sugar, oil, egg, applesauce, almond extract, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients. Mix well. Stir in your chocolate chips. Divide among 20 muffin cups about ¾ full.
  5. In a food processor pulse walnuts, cold butter, sugar and cinnamon about 5 times. Take 2 tsp of nut mix and place on the top of each pumpkin cup.
  6. Bake for about 15 minutes. Check the color of your nut topping, if getting dark, cover loosely with tinfoil. Bake until muffin springs back when lightly pressed, about another 8 minutes.

Watching “Leave it to Beaver” reruns on Nickelodeon was an all time favorite of mine as a kid. Like a window into Norman Rockwell’s soul, Americana could not have looked any sweeter. How simple life seemed back then, kids could play in the streets, dad went to work and mom stayed home. Family roles were clearly defined and though most likely confining for women, I’m guessing there was also some comfort in the concrete expectations of motherhood.

Despite the fact I spent my college years in Vermont, neither school nor work had ever been cancelled due to snow. Vermonters are tough as nails, if you can’t drive to work, then you better strap your snow shoes on and huff it. They’re used to massive snowfall and handle business like a boss, clearing roads quickly. Colorado on the other hand, mmm not so much. It appears Colorodans simply wait three days until it warms up and the snow melts. Why use snow plows if you don’t have to?

I remember first becoming a mother and questioning what my new position should look like. Should I still play the Beasty Boys in carpool, or should I be more responsible and play children’s music. I’m embarrassed to admit I don’t particularly care for tomatoes. I’m rather picky about them in fact. I’ve always requested tomato-free sandwiches and hamburgers. If my meal happens to arrive with one of those little culprits, it’s like an affront to my soul. Here I am waiting for a bacon cheeseburger with crispy lettuce and they want to throw a wet slice of tomato in the bun, no thank you! The texture simply doesn’t appeal to me. Though I can appreciate their earthy sunburst flavors, I generally prefer my tomatoes in other forms such as: ketchup, marinara and soup. I will however make an exception for cherry tomatoes. Their size, the way they pop in your mouth and their savory-citrus flavor, make them far more appealing.

Filled with tart cinnamon apples, plump raisins and a delicate crumb similar to a coffee cake, this lovely dessert is perfect for the New Year or any celebration. Best served warm with a sprinkle of powdered sugar, it’s a delightful ending to any meal. Alternatively, you can allow this cake to cool completely and top with whipped cream or vanilla bean ice cream.

This salad is easy to make, and has a lovely variety of flavors which marry well and leave you satisfied. Crispy maple chicken, tangy goat cheese, crunchy hazelnuts and roasted red peppers, this salad is a big crowd-pleaser. Dress with your favorite vinaigrette and dinner is served.
