IMG_1979 We look forward to Halloween every year and this year is no exception.  Since it’s our last Halloween in Santa Barbara, we thought we would make it extra special and invite some friends to join us for a mini Halloween bash prior to trick-or-treating. I wanted to make something festive and fun for the kids, without adding too much sugar to an already “insulin” challenged affair. These cute little crispy treats are the perfect solution, as they are easy to make and can be created using mostly organic ingredients.  These will also freeze well if you need to make these in advance.

I used plant-based natural food colors for the Frankenstein treats. Natural food colors will not come out as vibrant as artificial food dye. You can find plant-based food coloring at your local health food store, Whole Foods or online at amazon. India Tree and Color Garden are two brands I recommend. You can purchase organic cocoa crispy cereal and plain rice crispy cereal at most health food stores. You can purchase natural marshmallows or make your own organic version by following my "Bourbon Marshmallow" recipe post. Natural licorice, both red and black, can be found at your local health food store. Michael's Craft store and some grocery stores carry edible googly eyes.
Ingredients
  • Frankenstein Treats
  • 3 Tbsp of butter
  • 10.5 oz Marshmallows
  • 6 cups of plain rice crispy treats
  • green plant-based food dye
  • 12 oz semi-sweet chocolate-chopped fine
  • red licorice
  • black licorice
  • Yogurt covered raisins
  • edible eyes
  • Alien Faces
  • 3 Tbsp butter
  • 10.5 oz marshmallows
  • 6 cups of cocoa crispy
  • red licorice
  • black licorice
  • edible eyes
Instructions
  1. For both treats, you will heat your butter in a medium size pot over medium heat. Add your marshmallows and stir until completely melted. If using food coloring, add now and mix thoroughly. Remove from heat. Stir in rice cereal.
  2. Press mixture into a wax-paper lined 13x9 pan. You can use a piece of wax paper to help press the mixture flat. Allow to cool for 25 minutes.
  3. Cut into rectangles for Frankenstein and circles for aliens. Set aside cutouts on wax paper.
  4. Heat your chocolate in a microwave dish in 30 second intervals, stirring in between. When smooth, you can dip the tops of the Frankenstein cutouts in the chocolate or carefully spoon the chocolate on to the tops of treats. Take a toothpick or something similar in size and dip the hot chocolate on the back of the eyes. Now adhere eyes to the treats. You may also use royal icing to "glue" eyes if its easier for you to control drips.
  5. Cut strips of licorice, make lips and adhere to treats using chocolate.

Watching “Leave it to Beaver” reruns on Nickelodeon was an all time favorite of mine as a kid. Like a window into Norman Rockwell’s soul, Americana could not have looked any sweeter. How simple life seemed back then, kids could play in the streets, dad went to work and mom stayed home. Family roles were clearly defined and though most likely confining for women, I’m guessing there was also some comfort in the concrete expectations of motherhood.

Despite the fact I spent my college years in Vermont, neither school nor work had ever been cancelled due to snow. Vermonters are tough as nails, if you can’t drive to work, then you better strap your snow shoes on and huff it. They’re used to massive snowfall and handle business like a boss, clearing roads quickly. Colorado on the other hand, mmm not so much. It appears Colorodans simply wait three days until it warms up and the snow melts. Why use snow plows if you don’t have to?

I’m embarrassed to admit I don’t particularly care for tomatoes. I’m rather picky about them in fact. I’ve always requested tomato-free sandwiches and hamburgers. If my meal happens to arrive with one of those little culprits, it’s like an affront to my soul. Here I am waiting for a bacon cheeseburger with crispy lettuce and they want to throw a wet slice of tomato in the bun, no thank you! The texture simply doesn’t appeal to me. Though I can appreciate their earthy sunburst flavors, I generally prefer my tomatoes in other forms such as: ketchup, marinara and soup. I will however make an exception for cherry tomatoes. Their size, the way they pop in your mouth and their savory-citrus flavor, make them far more appealing.

Filled with tart cinnamon apples, plump raisins and a delicate crumb similar to a coffee cake, this lovely dessert is perfect for the New Year or any celebration. Best served warm with a sprinkle of powdered sugar, it’s a delightful ending to any meal. Alternatively, you can allow this cake to cool completely and top with whipped cream or vanilla bean ice cream.

This salad is easy to make, and has a lovely variety of flavors which marry well and leave you satisfied. Crispy maple chicken, tangy goat cheese, crunchy hazelnuts and roasted red peppers, this salad is a big crowd-pleaser. Dress with your favorite vinaigrette and dinner is served.
