Happy Fourth of July! We are headed to Colorado to visit friends and family and enjoy the beautiful Rockies. Before we leave, here is a patriotic treat to savor on these warm summer days.
Fourth of July Tropical Ice Pops

- 1 pound of frozen pineapple
- 1 over ripe banana
- 2 oz of coconut cream or full fat coconut milk
- 1 Tbsp of rum
- 1 tsp of vanilla
- 5 oz of orange juice
- 1 oz of lemon juice
- 1 tsp of lemon zest
- Place all ingredients in blender and blend until smooth.
- Pour into ice-pop molds and freeze overnight or at least 6 hours. If you don't have molds, you can used wax-coated Dixie cups and popsicle sticks.
